I thought Mikumari was a pretty good challenge in Xenosaga 2 provided you don't go crazy with leveling. Since it's an E.S. battle you can't use a long combo + Erde Kaiser Fury to make it stupid easy. I wanted the maximum challenge so I leveled up just enough so that Zebulun wouldn't be 1-rounded at the very start*. It took like 10 tries to beat Mikumari under those conditions because many times the boss would crit on it's opening attack killing Zebulun anyway and Asher has no way to heal so it didn't last long on it's own. Other times the fight ended when Mikumari decided it was fed up and went on a boosted killing spree with crits all over the place or got to it's last phase, when it no longer changes into pure mode to stop attacking for a bit, and the dynamic duo couldn't pump out enough damage in time to finish it off.

* Loading up my file Asher is lvl. 54 with 28751 hp piloted by Jr. w/Jin as co-pilot and Zebulun is lvl. 51 with 18499 hp piloted by MOMO w/Shion as co-pilot.

On the other hand, I thought the bosses of Final Fantasy 1 and 4 were good, but others have said they really weren't.

I finished a solo-Cecil run in FF4 a couple of weeks ago using a romhack to change the game around and I thought it was a decent challenge but most of my dying was to random enemies and not bosses. One major drawback in FF4 is that bosses go through repetitive script cycles over and over again. If you know a nasty attack is coming and when it takes some of the challenge out of the game.

Hmm, other bosses. Well, I'll add pretty much any apprentice battle from 7th Saga. They're always the same level the player character is plus a substantial stat bonus. You pretty much have to buff yourself to the gills and abuse bad AI to stand a chance. That or you could abuse the oversight with the fact that if the player character is dead and you have a companion the fight will continue as if it's 1-on-1 with the companion but they can revive the player character.
